Bunker Bars

From the kitchen of---Roger M. Peet

1- 18 oz. pkg. German Chocolate Cake Mix

3/4 cup melted butter and 1/3 cup evaporated milk

1 pkg. Caramels

1/2 cup evaporated milk

1- 6 oz. chocolate chips and 1 cup chopped walnuts

Use a 9X13 lightly greased pan and bake at 350º

 

Put caramels and 1/2 cup evaporated milk on low heat

Mix first 3 ingredients together.  Put 1/2 of this mix in the cake pan and bake for 6 min.  Then sprinkle with the chocolate chips & walnuts and pour the melted caramel over the chips and nuts.  Put remaining cake mix over this and bake for 20 min.

 

Note:  If you put mixing pan with remaining cake mix on very low heat (warm) it will keep the butter somewhat melted so it spreads quite easily.

 

 

Monster Cookies

1 cup margarine (cheap stuff)

2 1/2 cups peanut butter (creamy or chunky)

----Mix together margarine and peanut butter.  When creamy, add:  2 cups white sugar

          2 cups brown sugar

----Mix sugar with margarine and peanut butter & add 6 eggs.  Mix well and add:  2 teaspoons baking soda.  

Stir in by hand:  1/2 pound of M&M's.  (add more if you wish)

                            6 to 8 oz. chocolate chips (more if you wish)

----Mix well.  Stir in by hand in a large bowl:  9 cups of oatmeal and stir well.

 

Bake at 350 degrees for 8-10 minutes.  Remove from pan when they are still warm.  Makes a lot of cookies.

 

Chocolate Chip Cheese Bars

This recipe uses a 9 x 13 cake pan

 

2- rolls Pillsbury Slice & Bake Choc. Chip Cookies

2- 8 oz pkgs cream cheese- softened

2 eggs

3/4 cup sugar--1 teasp vanilla

 

  1.  Slice 1 roll of cookies, 1/2" thick and place in bottom of pan

  2.  Spread together to cover pan

  3.  If you need a little more to cover... use the next roll if 

       necessary- even if just a couple of slices.

  4.  Mix cream cheese & sugar till smooth

  5.  Add eggs, sugar & vanilla.  Mix till smooth

  6.  Pour this on top of cookies in pan.  Spread to cover.

  7.  Slice 2nd roll of cookies the same.  Place on top of cream

       cheese mixture.  Don't worry about covering it completely....

       The bottom will bake up into the top....it will be delicious.

  8.  Bake at 375° for 45 minutes--check after 35-40   

       minutes--till brownish on top.

  9.  Cool and refrigerate overnight.  If you don't cool and refrig

        first...they will be mushy and messy to cut up...refrigerate 

        first!!!!

  10.  Slice into  bite size pieces (about 1/2" squares)

 

You can also use a brownie mix instead of the cookie roll.  Just place half of the batter in the pan, then cover with cream cheese--then the other half of the brownie mix...Just be sure that the mix is for a 9 x 13 pan.
